Why this works
A dessert with moderate fibre from apples but high in sugar, refined carbohydrate and saturated fat, so best enjoyed as an occasional treat rather than an everyday choice.
Apples provide fibre and polyphenols. The apples contribute some fibre, vitamin C and antioxidant plant compounds, although much of the benefit is offset by the added sugar and pastry.
Butter and puff pastry raise saturated fat. This recipe is relatively high in saturated fat, which can contribute to a less heart-friendly profile if eaten regularly.
Cinnamon and lemon add flavour without much sugar. Cinnamon and lemon juice boost flavour with minimal calories, helping reduce the need for extra sweetening.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
- Peel, core and halve the apples, then toss them with the lemon juice and cinnamon.
- Melt the butter in an ovenproof frying pan over a medium heat, then add the caster sugar and cook until it melts into a golden caramel.
- Arrange the apple halves tightly in the caramel, cut-side up, and cook for 8–10 minutes until they begin to soften.
- Roll out the puff pastry and lay it over the apples, tucking the edges down around the fruit.
- Bake for 25–30 minutes until the pastry is puffed and deep golden.
- Leave to stand for 5 minutes, then carefully invert onto a plate and serve warm.
