Why this works

Moderate-energy pancakes with some protein from milk and egg, but relatively low fibre and higher in refined carbohydrate and saturated fat due to white flour, butter and chocolate spread.

Protein from dairy and egg. Milk and egg provide a modest amount of complete protein, supporting satiety and muscle maintenance.

Low fibre content. Plain flour contributes little fibre, so this dish is less supportive of gut health and steadier blood glucose than higher-fibre alternatives.

Saturated fat and added sugar. Butter and chocolate spread increase saturated fat and free sugar, making this more of an occasional treat than an everyday breakfast.

Method

  1. Put the plain flour in a mixing bowl and make a well in the centre.

Keep the flour piled up around the sides of the bowl so the liquid can be added into the middle without splashing, and use a bowl that leaves plenty of room for whisking.

  2. Crack in the egg and gradually whisk in the milk until you have a smooth batter.

Add the milk in a slow trickle while whisking from the centre outwards; this helps prevent lumps and gives a batter that should flow like single cream rather than cling to the whisk.

  3. Heat a little butter in a non-stick frying pan over a medium heat.

Let the butter foam but not brown before adding the batter, as browned butter can taste bitter and the pan should be hot enough for the butter to sizzle gently when it hits the surface.

  4. Pour in a small ladle of batter and cook for 1 to 2 minutes until the underside is golden.

Watch for bubbles forming on the top and the edges turning matte before moving the pancake; if it colours too fast, lower the heat slightly so the middle has time to set.

  5. Flip the pancake and cook the other side for 30 seconds to 1 minute.

Use a thin spatula and flip in one confident motion to avoid tearing, then look for the second side to lose its wet sheen and take on a pale golden colour.

  6. Repeat with the remaining batter, adding more butter as needed.

Wipe out any burnt butter bits between batches and add only a small knob each time, because too much fat can make the pancakes fry rather than cook evenly.

  7. Spread each pancake with chocolate spread and fold or roll to serve.

Warm the chocolate spread slightly if it feels stiff, and spread it while the pancakes are still just warm so it melts into a glossy layer without tearing the surface.
