Why this works
Moderate-calorie pancakes with some protein from milk and egg, but relatively refined carbohydrate and saturated fat from butter.
Cocoa polyphenols. Cocoa powder contributes small amounts of flavonoids and a modest fibre boost.
Calcium and B12. Milk and egg provide calcium and vitamin B12, supporting bone health and normal red blood cell formation.
Salt and saturated fat. Butter and added salt increase saturated fat and sodium, so this is best enjoyed as an occasional treat rather than an everyday breakfast.
Method
- Sift the plain flour, cocoa powder, caster sugar, baking powder and salt into a bowl.
- Make a well in the centre and whisk in the milk and egg until you have a smooth batter.
- Melt a little butter in a frying pan over a medium heat.
- Spoon in small rounds of batter and cook for 1 to 2 minutes until bubbles appear on the surface.
- Flip and cook for another minute until set and cooked through.
- Repeat with the remaining batter, adding a little more butter when needed.
- Serve warm with your favourite toppings.
