Why this works

A moderately energy-dense savoury scone with useful protein and calcium from cheese and egg, but relatively high in refined carbohydrate, saturated fat and salt.

Calcium. Cheddar and milk contribute calcium for bone health, though this also raises saturated fat and sodium.

Vitamin A. Sweet potato provides beta-carotene, a precursor to vitamin A, supporting vision and immune function.

Salt content. The added teaspoon of salt plus cheddar means sodium is fairly high for a baked snack.

Method

  1. Heat the oven to 220°C (Fan 200°C, 428°F, Gas Mark 7) and line a baking tray with baking paper.
  2. Bake or steam the sweet potato until tender, then mash until smooth and leave to cool slightly.
  3. In a large bowl, mix the plain flour and baking powder, then rub in the butter until the mixture resembles breadcrumbs.
  4. Stir in the grated Cheddar cheese and the mashed sweet potato.
  5. Beat the egg with the milk, then add most of it to the bowl and mix gently to form a soft dough. Add a little more milk if needed.
  6. Tip the dough onto a lightly floured surface and pat out to about 2 cm thick.
  7. Cut into rounds or triangles and place on the tray.
  8. Bake for 12–15 minutes until risen and golden. Cool slightly before serving warm.
