Why this works

High in protein and very energy-dense, but also high in saturated fat and sodium due to the bacon, butter and cheese.

Protein-rich eggs and bacon. Provides a substantial amount of complete protein per serving, supporting satiety and muscle maintenance.

Vitamin C from orange pepper. Red/orange pepper adds vitamin C and carotenoids, helping increase the micronutrient content despite the rich base.

High sodium and saturated fat. Bacon, extra mature cheese and butter make this dish relatively high in salt and saturated fat, which is worth noting for heart health.

Method

  1. Heat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and butter a medium baking dish.
  2. Cook the bacon until just browned, then add the orange pepper and cook for 3-4 minutes.
  3. Whisk the eggs and stir in most of the cheese.
  4. Tip the bacon and pepper into the dish, pour over the egg mixture and top with the remaining cheese.
  5. Bake for 18-20 minutes until puffed and set, then rest briefly before slicing.
