Why this works

A rich, energy-dense pasta dish with moderate protein but high saturated fat and sodium, best enjoyed in moderation.

Calcium from dairy. Milk and cheddar provide a meaningful amount of calcium for bone health, though the cheese also raises saturated fat.

Protein contribution. Cheddar and milk boost the protein content, making this more filling than plain pasta.

High sodium. Adding 1 tsp of salt pushes the sodium level up considerably, which may be unsuitable for those watching blood pressure.

Method

  1. Cook the pasta in salted boiling water until just tender, then drain.
  2. Melt the butter in a saucepan, stir in the flour and cook for 1 minute.
  3. Gradually whisk in the milk and simmer until thickened.
  4. Stir in the cheddar cheese until smooth, then season with salt and black pepper.
  5. Toss with the pasta and serve immediately.
