Why this works
A light, hydrating dessert with moderate natural sugars, good fibre from chia, and very little sodium.
Chia seeds. Provide fibre and a small amount of plant protein, which helps improve fullness and supports digestive health.
Watermelon and lime. Both add vitamin C and hydration; watermelon also contributes lycopene, a beneficial antioxidant.
Sugar content. Most of the sugar comes from watermelon and honey, so this is better suited as an occasional sweet snack than an everyday low-sugar choice.
Method
- Cut the watermelon into small cubes and lightly crush a handful to create some juice.
- Mix the chia seeds with the watermelon juice, lime juice and honey in a bowl.
- Leave for 10 minutes, stirring once or twice, until the mixture begins to thicken.
- Divide the remaining watermelon into glasses, then spoon the chia mixture on top.
- Finish with a little extra lime zest or juice if you like and serve chilled.
