Why this works

A protein-rich, satisfying bake that is relatively high in saturated fat and sodium due to the cheese and added salt.

High-quality protein. Eggs and cheddar provide a substantial amount of complete protein, supporting muscle maintenance and satiety.

Calcium source. Cheddar and milk contribute useful calcium for bone health, though the dish is also high in saturated fat.

Sodium concern. 1 tsp of added salt makes this dish high in sodium, which may be less suitable for those limiting salt intake.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5). Lightly grease a small baking dish.

Let the oven fully reach temperature before the dish goes in so the eggs start setting immediately rather than sitting and turning watery. A thin sheen of grease is enough; too much can make the base greasy.

  2. Finely chop the onions and scatter them into the dish with the sweetcorn.

Cut the onion very finely so it softens in the bake instead of staying sharp and crunchy. Keep the sweetcorn in an even layer so the finished egg bake slices more neatly.

  3. In a bowl, whisk the eggs with the milk, salt and black pepper until combined.

Whisk until the mixture looks uniformly pale yellow with no streaks of unbeaten white. Stop once combined; over-whisking can make the bake puff up then sink more unevenly.

  4. Stir in most of the cheese, then pour the mixture over the sweetcorn and onions.

Fold the cheese through lightly so it is distributed without clumping at the bottom. Pour slowly into the corners of the dish to avoid disturbing the onion and sweetcorn layer.

  5. Sprinkle the remaining cheese on top and bake for 25–30 minutes, until golden and just set.

Watch for the top to turn a deep golden brown at the edges while the centre still has a slight wobble. If it browns too quickly, cover loosely with foil to stop the cheese scorching.

  6. Leave to stand for 5 minutes before serving warm.

Use the standing time so the centre firms up enough to cut cleanly without running. Serve while still warm, as it will be at its softest and creamiest then.
