Why this works

A light, vegetable-rich stir-fry with moderate protein, moderate fat and relatively high sodium from added salt.

Fibre and micronutrients. Cabbage and green beans provide fibre, vitamin C and folate, supporting digestive health and normal immune function.

Protein from eggs. Eggs add high-quality protein plus vitamin B12 and choline, which support muscle maintenance and nervous system health.

Sodium concern. Half a teaspoon of salt raises the sodium content significantly, which may be less suitable for people limiting salt intake.

Method

  1. Slice the cabbage finely and trim the green beans into bite-sized lengths.
  2. Heat a little plain cooking oil in a wok or large frying pan and stir-fry the green beans for 3 minutes.
  3. Add the cabbage and spring onions, then cook until the cabbage is just wilted and bright.
  4. Push the vegetables to one side, pour in the beaten eggs and scramble gently.
  5. Season with salt and black pepper, toss everything together and serve immediately.
