Why this works

A simple, protein-containing vegetable bowl that is relatively low in carbohydrate but higher in saturated fat from butter, with moderate sodium depending on added salt.

Cabbage provides fibre and vitamin C. Cabbage contributes fibre for digestive health, plus vitamin C and plant compounds that support overall immune function.

Eggs add high-quality protein and micronutrients. Eggs supply complete protein, as well as vitamin B12, selenium and choline, which support energy metabolism and cell function.

Butter raises saturated fat. The butter increases energy density and saturated fat, so portion size matters if the dish is eaten frequently.

Method

  1. Bring a pan of water to the boil and gently lower in the eggs.
  2. Cook for 6-7 minutes for soft-boiled eggs, then cool briefly and peel.
  3. Meanwhile, shred the cabbage and cook it in butter over a medium heat until tender.
  4. Divide the cabbage between bowls and top with the halved eggs.
  5. Add seasoning if using and serve immediately.
