Why this works
Light, low-fat fruit jelly with moderate sugar from soft drink and tropical fruit; best enjoyed as an occasional treat rather than an everyday snack.
Vitamin C contribution. Berries, pineapple and mango provide some vitamin C, which supports immune function and iron absorption.
Very low fat. This dessert is naturally almost fat-free, and the gelatine adds very little fat or saturated fat.
Sugar content to note. Most of the carbohydrate comes from the soft drink and fruit sugars, so portions should be kept modest if watching sugar intake.
Method
- Warm a little of the soft drink and dissolve the gelatine in it according to the packet instructions.
Keep the soft drink only gently warm rather than hot, or the fizz will disappear and the jelly may lose its lively flavour. Stir until the gelatine granules are completely clear with no sandy residue left at the bottom.
- Stir in the remaining soft drink and mix well.
Add the cold soft drink gradually and stir slowly to preserve as much carbonation as possible; brisk mixing will flatten it and can make the jelly less airy. The mixture should look evenly blended with no streaks of concentrated gelatine.
- Divide the chopped pineapple, mango and berries between serving glasses.
Cut the fruit into small, even pieces so each spoonful sets neatly and the glasses fill tidily rather than leaving large gaps. If the fruit is very juicy, let it drain briefly first to stop the jelly becoming watery at the bottom.
- Pour over the liquid jelly mixture and chill for at least 4 hours until set.
Pour down the side of the glasses or over the back of a spoon to avoid disturbing the fruit and to reduce bubbles on the surface. Chill on a level shelf so the jelly sets with a smooth, even top rather than a sloping one.
- Serve cold, topped with mint if liked.
Add the mint just before serving so it stays bright green and fresh-looking instead of wilting in the cold. Lightly bruise the leaves between your fingers first to release a stronger aroma without making them look crushed.
