Why this works

Very low in fat and protein, with moderate sugar from the soft drink and fruit; a light dessert best enjoyed occasionally.

Vitamin C from fruit. Orange segments and berries provide vitamin C, which supports normal immune function and iron absorption.

Gelatine source of protein. Gelatine contributes a small amount of protein, but it is not a complete protein source.

Sugar content. Most of the sugar is likely from the soft drink, so this dessert may be less suitable for those monitoring free sugars.

Method

  1. Soak the gelatine according to the packet instructions.

Use just enough liquid to bloom the gelatine, and leave it undisturbed until the granules look swollen and spongy rather than dry and grainy.

  2. Gently warm a small amount of the soft drink, then stir in the gelatine until fully dissolved.

Keep the heat very low so the soft drink does not simmer or lose its fizz; the gelatine should disappear completely, leaving the liquid clear with no specks at the bottom.

  3. Mix in the remaining soft drink and a few fruit pieces.

Let the hot mixture cool a little before adding the rest of the drink, then fold in the fruit gently so the berries and orange stay intact and the jelly does not turn cloudy.

  4. Pour into four glasses and chill for at least 3 hours until set.

Set the glasses on a tray so they stay level in the fridge, and do not move them once chilled or the surface may ripple before it firms up.

  5. Serve cold.

Unmoulding is unnecessary here, so simply check that the jelly wobbles as one piece and the fruit sits evenly suspended before bringing it to the table.
