Why this works
A protein-rich, savoury main dish that is relatively high in fat and energy, with moderate sodium depending on the jar sauce and added salt.
High-quality protein. Lamb shanks provide substantial protein, supporting muscle repair and satiety.
Iron and B vitamins. Lamb is a good source of haem iron, vitamin B12 and zinc, which support red blood cell production and immune function.
Sodium caution. Jarred sauce and added salt can push sodium up, so this dish may be less suitable for those watching blood pressure.
Method
- Preheat the oven to 160°C (Fan 140°C, 320°F, Gas Mark 3).
- Heat the cooking oil in a casserole dish and brown the lamb shanks on all sides.
- Pour in the jar of sauce, season with salt and black pepper, then cover tightly.
- Cook in the oven for 2 1/2 to 3 hours until the lamb is very tender, turning once if needed.
- Serve hot with the sauce spooned over the top.
