Why this works
A protein-rich curry that is relatively high in saturated fat and sodium, with moderate energy from lamb and oil.
High-quality protein. Lamb provides a substantial amount of complete protein and key minerals such as zinc and iron, supporting muscle maintenance and energy metabolism.
Tomatoes and onions. Tinned tomatoes and onions contribute vitamin C, potassium and some fibre, though the overall fibre remains modest per serving.
Salt content. The added teaspoon of salt raises sodium notably, which may be a concern for those managing blood pressure.
Method
- Cut the lamb into bite-sized pieces and finely slice the onion.
- Heat 1 tbsp plain cooking oil in a heavy pan over a medium-high heat. Add the lamb and brown it for 6 to 8 minutes, turning so it colours on all sides.
- Add the onion and cook for 8 minutes until softened and starting to caramelise.
- Stir in the garam masala, salt and black pepper, and cook for 1 minute.
- Pour in the tinned tomatoes and 200ml water, then stir well and bring to the boil.
- Lower the heat, cover with a lid and simmer gently for 60 minutes, stirring occasionally, until the lamb is tender and the sauce is rich and thick.
- If the sauce is too loose, remove the lid and simmer for a final 10 minutes. Taste and adjust the seasoning before serving.
