Why this works

A lightly sweet, low-energy vegetable side with modest fibre and very low sodium, though it contains some natural sugar from the orange juice and a little saturated fat from butter.

Beta-carotene from pumpkin. Pumpkin provides carotenoids, which the body can convert to vitamin A to support vision, skin and immune function.

Vitamin C from orange juice and tomato. The orange juice and tomato passata contribute vitamin C, which supports immune health and helps with iron absorption.

Low sodium overall. This dish is naturally very low in salt, making it a good fit for a lower-salt meal pattern.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Cut the pumpkin into wedges or chunks and place in a roasting dish.
  3. Warm the butter, tomato passata, orange juice and vinegar together in a saucepan for 3–4 minutes.
  4. Pour the glaze over the pumpkin and toss to coat well.
  5. Roast for 30–35 minutes, turning once, until the pumpkin is tender and sticky.
  6. Serve hot, spooning over any remaining glaze.
