Why this works

A savoury, protein-forward salad that is relatively low in carbohydrate and provides some fibre, but it is fairly salty and contains a moderate amount of saturated fat from the bacon.

Vitamin C from cabbage and lemon. Cabbage and lemon juice contribute vitamin C, which supports immune function and helps with iron absorption.

Fibre and plant compounds. Cabbage adds fibre and protective phytochemicals, supporting gut health and fullness.

High sodium from bacon and mustard. Bacon is likely the main contributor to sodium, so this dish may be less suitable for people monitoring salt intake.

Method

  1. Fry the bacon in a dry pan until crisp, then remove and keep warm.
  2. Add the shredded cabbage to the pan and cook for 2–3 minutes until just wilted, using any bacon fat left in the pan.
  3. Whisk the lemon juice and mustard together with pepper, then toss through the cabbage.
  4. Stir the bacon back in and serve immediately while still warm.
