Why this works
A protein-rich, energy-dense bake with higher saturated fat and sodium, best suited to an occasional main meal rather than an everyday lighter option.
High-quality protein. Lamb shanks and mozzarella provide substantial protein for muscle repair and satiety.
Calcium source. Mozzarella contributes calcium, which supports bone health, though the amount will vary by cheese brand.
Sodium and saturated fat. The added salt plus lamb and cheese make this dish relatively high in sodium and saturated fat.
Method
- Preheat the oven to 170°C (Fan 150°C, 338°F, Gas Mark 3½).
- Season the lamb shanks with salt and black pepper and place them in a deep baking dish.
- Add the sliced red pepper and sweet peppers around the lamb, then pour in a little water.
- Cover tightly with foil and bake for 3 hours until the lamb is tender.
- Remove the foil, tear over the mozzarella and bake for 10 minutes until melted and golden.
- Serve straight from the dish with the peppers and cooking juices.
