Why this works

A rich, indulgent sauce that is relatively high in saturated fat and sugar, best enjoyed in small portions as an occasional treat.

Dark chocolate polyphenols. Dark chocolate and cocoa powder provide flavanols and antioxidants, though the benefit is tempered by the added sugar and butter.

Calcium from milk. The milk contributes some calcium and protein, supporting bone health, but the overall protein content per serving remains modest.

Saturated fat and sugar. Butter, chocolate and caster sugar make this a higher-satiety dessert sauce with a notable saturated fat and sugar load.

Method

  1. Finely chop the dark chocolate and place it in a small saucepan with the cocoa powder and caster sugar.
  2. Pour in the milk and set the pan over a low heat, stirring constantly until the chocolate has melted and the mixture is smooth.
  3. Add the butter and vanilla extract, then keep stirring for 1-2 minutes until the sauce is glossy and slightly thickened.
  4. Remove from the heat and serve warm, or let it cool slightly for a thicker pouring sauce.
