Why this works

A filling, protein-rich traybake with moderate carbohydrate and fat; reasonably balanced, but the added salt and oil keep it from being a low-sodium or low-fat dish.

Good protein contribution. Pork provides a substantial amount of protein per serving, supporting muscle maintenance and satiety.

Potassium and vitamin C. Potatoes, onions and lemon contribute potassium, while the lemon and onions add a modest amount of vitamin C and antioxidant compounds.

Sodium concern. A full teaspoon of salt in the recipe raises sodium, so this dish is less suitable for those limiting salt intake.

Method

  1. Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Cut the potatoes into bite-size chunks and slice the brown onions and red onions into wedges.
  3. Place the pork in a roasting tin with the potatoes and onions, then add a little oil if needed and season well with salt and black pepper.
  4. Roast for 50-60 minutes, turning the potatoes and onions halfway through, until the pork is cooked through and the potatoes are golden.
  5. Squeeze over the lemon juice just before serving and rest the pork for a few minutes before slicing.
