Why this works

A moderately energy-dense dish with useful fibre and potassium from sweet potato, but it is also high in sodium and saturated fat due to the chorizo and added seasoning.

Beta-carotene from sweet potato. Sweet potato provides beta-carotene, which supports normal vision and immune function.

Protein and iron from chorizo. Chorizo contributes protein and some iron, but also adds a considerable amount of saturated fat and salt.

Sodium concern. The chorizo, pickles and added salt make this dish relatively high in sodium, which may be a concern for blood pressure.

Method

  1. Preheat the oven to 210°C (Fan 190°C, 410°F, Gas Mark 6).
  2. Cut the sweet potato into wedges and toss with salt and black pepper.
  3. Roast for 25-30 minutes until tender and starting to brown.
  4. Meanwhile, cook the chorizo in a frying pan until crisp.
  5. Stir the yoghurt with a little black pepper.
  6. Serve the roasted sweet potato topped with chorizo, yoghurt and chopped pickles.
