Why this works
A fairly light, protein-containing breakfast with modest fat, but the jam and orange juice make it relatively high in natural and added sugars for the portion.
Protein from eggs. Eggs provide high-quality protein, which supports satiety and muscle maintenance.
Vitamin C. Orange juice and lime contribute vitamin C, supporting immune function and helping with iron absorption.
Low fibre. This dish is very low in fibre, so it will not be especially filling for long and may have less impact on digestive health.
Method
- Soft-boil the eggs in simmering water for 6 minutes, then cool briefly and peel.
- Warm the orange juice and jam together in a small pan until smooth and glossy.
- Slice the eggs in half and spoon the glaze over the top.
- Finish with a little lime juice, chopped coriander and black pepper. Serve straight away.
