Why this works
A savoury, protein-rich tray bake that is relatively low in carbohydrate but high in salt and saturated fat due to the bacon.
High-quality protein. Bacon provides a substantial amount of protein, which supports satiety and muscle maintenance.
High sodium content. Bacon is naturally salty and this dish is likely to be high in sodium, so it may not suit those limiting salt intake.
Vitamin C from orange juice. The orange juice contributes a small amount of vitamin C, though some will be reduced during cooking.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
- Arrange the bacon in a roasting tin and brush or spoon over the orange juice and mustard.
- Scatter over pepper and bake for 18-20 minutes, turning once, until glossy and cooked through.
- Let it rest for a couple of minutes before serving.
