Why this works

Moderate in energy with a decent protein hit, but fairly high in saturated fat and sodium due to the cheese, butter and added salt.

Potassium from potatoes. Potatoes contribute potassium, which supports normal blood pressure and muscle function.

B vitamins and selenium. Mushrooms provide B vitamins and selenium, which support energy metabolism and antioxidant protection.

Sodium and saturated fat caution. Cheddar, butter and the added salt make this dish relatively high in sodium and saturated fat.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).
  2. Slice the potatoes and mushrooms, then finely slice the onion.
  3. Melt the butter in a saucepan, stir in the flour and cook briefly, then slowly whisk in the milk to make a smooth sauce.
  4. Season the sauce and stir in half the cheese.
  5. Layer the potatoes, onion and mushrooms in a baking dish, pour over the sauce and top with the remaining cheese.
  6. Bake for 25–30 minutes until the potatoes are tender and the top is golden.
