Why this works
A rich, energy-dense dessert with moderate protein, high saturated fat and modest fibre, best enjoyed as an occasional treat rather than an everyday choice.
Calcium and protein. Milk and eggs contribute useful protein and calcium, supporting muscle maintenance and bone health.
Saturated fat. Butter and whole milk make this dish relatively high in saturated fat, which may be a concern if eaten frequently.
Refined carbohydrate. Plain flour and caster sugar provide quick-digesting carbohydrate but very little fibre, so it is not especially filling.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
- Make a pastry by rubbing the butter into the plain flour until it resembles breadcrumbs, then bring together with a little cold water and rest for 15 minutes.
- Roll out the pastry and line a tart tin or individual tart cases, then chill briefly.
- Heat the milk in a saucepan until just steaming.
- Whisk the eggs, caster sugar and vanilla extract in a bowl, then slowly pour in the hot milk while whisking.
- Pour the custard into the pastry case and grate a little nutmeg over the top.
- Bake until the custard is just set with a slight wobble in the centre, then cool before slicing.
