Why this works

High in protein and very low in carbohydrate, but also relatively high in saturated fat and sodium due to the bacon and cheddar.

High-quality protein. Eggs, bacon and cheddar provide around 19g protein per serving, supporting fullness and muscle maintenance.

Calcium source. Cheddar and milk contribute calcium, which supports bone health.

Sodium and saturated fat. Bacon and cheddar push sodium and saturated fat up, so this dish is best enjoyed in moderation if you're watching heart health.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4) and grease a mini muffin tin.
  2. Cook the bacon until browned, then chop finely.
  3. Whisk the eggs with the milk and stir in the cheddar cheese and bacon.
  4. Divide the mixture among the tin holes and top with a little grated cheese.
  5. Bake for 12 to 15 minutes until set and lightly golden.
  6. Cool briefly before removing and serving.
