Why this works

A moderate-energy sweet pancake serving with some protein from eggs and yoghurt, but relatively high in refined carbohydrate and added sugar.

Source of protein. Eggs and yoghurt provide a useful amount of protein for satiety and muscle maintenance.

Vitamin C from lemon. Lemon contributes vitamin C and a little natural acidity for flavour without adding many calories.

Added sugar and refined flour. The pancake mix and sugar increase total carbohydrates and free sugars, so this is best treated as an occasional breakfast or dessert.

Method

  1. In a bowl, whisk the pancake mix, eggs, water, lemon juice and a little lemon zest into a smooth batter, then rest for 5 minutes.
  2. Heat a lightly greased frying pan over a medium hob.
  3. Pour in small spoonfuls of batter and cook for 2 to 3 minutes until bubbles appear, then turn and cook for 1 to 2 minutes until golden.
  4. Stack the pancakes on warm plates, spoon over yoghurt, then scatter with sugar and a little extra lemon zest.
  5. Fold the pancakes and eat straight away for the best texture.
