Why this works
A moderately energy-dense baked couscous dish with useful protein from egg and cheese, but relatively high in saturated fat and not especially high in fibre.
Good protein contribution. Eggs, mozzarella and milk provide a solid amount of protein to support satiety and tissue maintenance.
Calcium and B12 source. Cheese and milk contribute calcium, while eggs and dairy also provide vitamin B12, useful for bone and nerve health.
Low fibre as written. With refined couscous as the main carbohydrate, fibre is modest, so this dish is less supportive of digestive health than a wholegrain version.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
- Put the couscous in a bowl and pour over the water. Cover and leave for 5 minutes until the grains have absorbed the liquid, then fluff with a fork.
- Beat the eggs with the low fat milk and stir through the couscous.
- Melt the butter and mix it through the couscous mixture, then fold in most of the mozzarella.
- Tip into a small baking dish and scatter the remaining mozzarella over the top.
- Bake for 20–25 minutes until set and golden on top. Leave to rest for a few minutes before serving.
