Why this works

Moderate-protein sandwich with relatively high fat and sodium, mainly from mayonnaise, bread and pickles.

Egg protein. Eggs provide high-quality protein plus vitamin B12, selenium and choline, supporting muscle maintenance and normal nervous system function.

Pickle sodium. Jarred pickles and added salt increase sodium considerably, which may be a concern for blood pressure if eaten often.

Low fibre. Using white bread and a small amount of pickle means fibre is modest, so this is not especially filling for digestive health.

Method

  1. Boil the eggs for 9-10 minutes, cool under cold water, then peel and chop them.
  2. Finely chop the jarred pickles and mix with mayonnaise, then stir in the chopped eggs and a little salt.
  3. Spread the mixture onto bread slices and sandwich together.
  4. Trim the crusts if you like and cut into fingers or triangles.
