Why this works
Moderate in energy and carbohydrate, but relatively high in sodium and fat due to the salt, mayonnaise and frying oil.
Beta-carotene from sweet potato. Sweet potato provides vitamin A precursors, supporting vision, skin and immune function.
Vitamin C from citrus and juice. Lemon juice and fruit juice add vitamin C, though some is lost with heating.
High sodium concern. 1 tsp salt across 2 servings makes this dish quite high in sodium, which is worth noting for blood pressure health.
Method
- Peel and coarsely grate the sweet potato, then squeeze out as much excess moisture as possible using a clean tea towel.
- In a bowl, mix the grated sweet potato with the egg, a little plain flour, salt and black pepper until it holds together.
- Heat a thin layer of cooking oil in a frying pan over a medium heat.
- Shape the mixture into small fritters and fry for 3–4 minutes on each side until golden and cooked through.
- Meanwhile, simmer the fruit juice in a small pan for a few minutes until slightly reduced and syrupy.
- Stir the mayonnaise with a spoonful of the reduced fruit juice to make a quick dipping sauce, or drizzle the glaze over the fritters to serve.
- Serve the fritters hot with the glaze or mayonnaise on the side.
