Why this works

A sweet, moderate-energy breakfast with some protein, but relatively high in carbohydrate and sugars for the portion size.

Vitamin C from pineapple. Canned pineapple contributes vitamin C, though some is lost during canning and the syrup may add extra sugar.

Protein from egg. The egg provides a useful boost of protein and key nutrients such as vitamin B12 and selenium.

Refined carbohydrate load. Bread and cereal make this dish more carbohydrate-dense, so it may cause a quicker rise in blood glucose if made with refined grains.

Method

  1. Drain the canned pineapple well and pat the rings or pieces dry with kitchen paper.
  2. Crush the cereal from the cereal box into coarse crumbs and spread them on a plate.
  3. Toast the bread until golden.
  4. If using egg, dip the pineapple briefly in beaten egg, then press into the crushed cereal to coat lightly.
  5. Warm a non-stick frying pan and cook the coated pineapple for 1–2 minutes on each side until crisp and lightly caramelised.
  6. Layer the crispy pineapple between the toasted bread to make stacks, then serve immediately.
