Why this works

Moderate-calorie, protein-rich tray bake with relatively high saturated fat and sodium depending on added salt and coleslaw dressing.

Good source of protein. Eggs, Greek yoghurt and cheese provide around 14 g protein per serving, supporting satiety and muscle maintenance.

Contains vitamin C and carotenoids. Orange pepper adds vitamin C and colourful plant compounds, which support immune function and antioxidant intake.

Watch the salt and saturated fat. Cheese, butter, coleslaw and any added salt increase saturated fat and sodium, so this dish is best enjoyed in moderation.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).

Let the oven fully come to temperature so the dish cooks evenly from the start.

  2. Lightly butter a shallow baking dish and add diced orange pepper.

Use a light, even coating of butter to prevent sticking and help the pepper soften without steaming.

  3. Whisk the eggs with the Greek natural yoghurt and a little salt and black pepper.

Whisk until the mixture is smooth and aerated for a lighter, more even bake.

  4. Pour over the pepper and scatter with extra mature cheese.

Pour gently to keep the pepper distributed, and sprinkle the cheese evenly for consistent browning.

  5. Bake for 18–20 minutes until just set and golden on top.

Bake just until the center has a slight wobble; carryover heat will finish the set as it rests.

  6. Serve with coleslaw on the side.

Add the coleslaw at the last moment so it stays crisp and contrasts with the warm bake.
