Why this works

Method

Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6). Cook the pasta in salted water until just al dente, then drain and set aside.
Melt the butter in a large pan over a medium heat. Add the sliced red onion and cook for 4-5 minutes until softened.
Add the mushrooms and cook until they release their moisture and start to colour. Stir in the cream and half of the cheese, then season well with salt and black pepper.
Fold the cooked pasta into the mushroom and red onion sauce, then tip everything into a baking dish. Scatter over the remaining cheese.
Bake for 15-20 minutes until bubbling and golden.
Meanwhile, heat the garlic baguette according to the packet instructions until crisp and golden.
Serve the pasta bake hot with the garlic baguette on the side.
