Why this works

Very high in added sugar and energy, with negligible protein, fat and fibre; best treated as an occasional treat.

High added sugar. Caster sugar and golden syrup make this a concentrated source of free sugars, with around 26 g sugar per serving.

Very low in micronutrients. This recipe provides minimal vitamins, minerals and fibre because it is essentially a sugar confection.

Bicarbonate of soda adds sodium. The small amount of bicarbonate contributes sodium, so the snack is not low sodium despite the simple ingredient list.

Method

  1. Line a square tin with baking paper and lightly grease it.
  2. Put the caster sugar, golden syrup and water into a large saucepan.
  3. Heat gently for 3 to 5 minutes, stirring until the sugar has dissolved.
  4. Bring to a steady boil and cook for 4 to 6 minutes without stirring, until the mixture turns a deep amber colour.
  5. Take the pan off the heat and quickly whisk in the bicarbonate of soda.
  6. Immediately tip the foaming mixture into the prepared tin.
  7. Leave to set for 1 hour, then break into pieces.
