Why this works

Moderate-protein, high-fat brunch dish with relatively high saturated fat and sodium from bacon, butter and added salt.

Protein and B vitamins. Eggs and bacon provide good-quality protein, plus B12 and niacin, which support energy metabolism.

Vitamin A from carrots. The grated carrots add beta-carotene, a precursor to vitamin A, supporting vision and immune function.

Sodium and saturated fat. Streaky bacon, butter and added salt push this dish towards a higher sodium and saturated fat profile.

Method

  1. Cook the streaky bacon in a large frying pan over medium heat until starting to crisp.
  2. Add the onions and carrots and cook in the bacon fat for 8-10 minutes until softened.
  3. Stir in a little butter for richness and season with salt and black pepper.
  4. Make 4 small wells in the mixture and crack in the eggs.
  5. Cover the pan and cook gently for 4-6 minutes, or until the eggs are cooked to your liking.
  6. Serve immediately while hot.
