Why this works

A moderate-calorie, protein-containing side dish with some saturated fat and a fairly low carbohydrate load.

Vitamin C from peppers. Red and sweet peppers provide a useful amount of vitamin C, which supports immune function and collagen formation.

Calcium and protein. Cottage cheese and cheddar add protein and calcium for muscle maintenance and bone health.

Saturated fat and sodium. Cheddar, cottage cheese and added salt can push saturated fat and sodium higher, depending on the brands used.

Method

  1. Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Halve the peppers and remove the seeds, then place them in a baking dish.
  3. Mix the cottage cheese with grated cheddar, salt and black pepper.
  4. Fill the pepper halves with the mixture, dot with a little margarine and bake for 18–20 minutes until tender and golden.
  5. Serve hot with salad leaves if desired.
