Why this works

A protein-rich, very low carbohydrate brunch dish that is filling but relatively high in saturated fat and sodium because of the cheese, butter and added salt.

Protein and B12. Eggs, ricotta and cheese provide a good amount of complete protein plus vitamin B12, supporting muscle maintenance and energy metabolism.

Calcium source. Ricotta and grated cheese contribute calcium, which is important for bone health; the cheese also adds some phosphorus.

Spinach micronutrients. Spinach adds folate, vitamin K and a small amount of iron, though the portion is modest and oxalates can limit iron absorption.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).
  2. Butter a small ovenproof dish or skillet and spoon in the ricotta.
  3. Make little wells in the ricotta, crack in the eggs and season lightly with salt.
  4. Scatter over the grated cheese and bake for 12-15 minutes until the eggs are just set.
