Why this works

A simple starchy side dish that provides energy and potassium, but is relatively high in saturated fat from butter and can become high in sodium depending on seasoning.

Potassium from potatoes. New potatoes contribute potassium, which supports normal blood pressure and muscle function.

Vitamin C and B vitamins. Potatoes provide some vitamin C and B6, though some is reduced by roasting.

Saturated fat from butter. Most of the dish's saturated fat comes from butter, so portion size matters if watching cholesterol.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Parboil the new potatoes in salted water for 8–10 minutes, then drain well.
  3. Put the butter in a roasting tin and place it in the oven until melted and sizzling.
  4. Add the potatoes and toss to coat in the hot butter.
  5. Roast for 25–30 minutes, turning once, until crisp and golden.
  6. Season with salt, black pepper, and chopped rosemary if available.
  7. Serve hot.
