Why this works
A fairly energy-dense, savoury meal with moderate protein and fibre, but relatively high saturated fat and refined carbohydrate from the brioche buns and cheese.
Calcium-rich. Cheese and Greek yoghurt contribute calcium, which supports bone health.
Vegetable content. Courgettes and red onion add fibre, potassium and a range of protective plant compounds.
Saturated fat concern. Butter, cheese and brioche buns push saturated fat higher, so this is best eaten in moderation.
Method
- Slice the courgettes into thin half-moons and finely slice the red onions.
- Melt the butter in a frying pan over a medium heat. Add the red onions and cook for 4–5 minutes until softened and lightly golden.
- Add the courgettes and cook for another 6–8 minutes, stirring occasionally, until tender and any excess moisture has evaporated.
- Reduce the heat to low and stir through the Greek yoghurt and cheese until the filling is creamy and the cheese has melted. Season to taste if desired.
- Split and lightly toast the brioche burger buns.
- Spoon the hot courgette and onion filling into the buns and serve immediately.
