Why this works

A light, tangy soup with modest calories, some protein, and a relatively high sodium load from sauerkraut and added salt.

Vitamin C and antioxidants. Red cabbage contributes vitamin C and anthocyanins, supporting immune function and providing antioxidant activity.

Protein from eggs. Eggs add complete protein plus nutrients such as vitamin B12 and choline.

Sodium concern. Sauerkraut and the pinch of salt make this soup fairly high in sodium for a small serving, which may be a concern for blood pressure management.

Method

  1. Simmer the red cabbage in water until tender.
  2. Add the sauerkraut and cook for 2 minutes.
  3. Beat the eggs in a bowl, then slowly pour them into the hot soup while stirring to create ribbons.
  4. Stir in the single cream and warm through gently without boiling.
  5. Serve hot in bowls.
