Why this works

A moderately high-energy savoury pancake dish with a good mix of carbohydrate and protein, but relatively high in saturated fat and moderate sodium.

Vitamin C from green pepper. Green pepper contributes vitamin C, supporting immune function and helping iron absorption from the meal.

Carotenoids and fibre from sweetcorn. Sweetcorn adds some fibre plus beneficial plant compounds, though the overall fibre content remains modest.

Sodium and saturated fat to watch. Butter, salt and brown sauce raise the saturated fat and sodium levels, so the dish is less suitable for low-salt or heart-focused diets.

Method

  1. Whisk the plain flour, eggs and milk into a smooth batter, then season lightly.
  2. Stir in the sweetcorn and finely chopped green pepper.
  3. Melt a little butter in a frying pan over medium heat.
  4. Pour in small ladles of batter and cook each pancake for 2-3 minutes per side until golden.
  5. Stack the pancakes and drizzle with brown sauce to serve.
