Why this works
Moderate-energy savoury muffins with some vegetable content, but relatively high in refined carbohydrate and saturated fat, with moderate sodium.
Vitamin C from peppers. Green and purple sweet peppers contribute vitamin C and antioxidant compounds, supporting immune function and collagen formation.
Energy from refined flour and butter. Self-raising flour and butter provide most of the energy, so these muffins are more carbohydrate- and fat-led than fibre-rich.
Sodium concern from added salt. One teaspoon of salt across the batch raises sodium levels, so these are not ideal for a low-sodium diet.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and line a 12-hole muffin tin with paper cases.
- Dice the green sweet pepper and purple sweet pepper into small pieces.
- In a large bowl, mix the self-raising flour, baking powder, caster sugar and salt.
- In another bowl, whisk the eggs, milk and melted butter together.
- Stir the wet ingredients into the dry ingredients until just combined, then fold in the diced sweet peppers and sweetcorn.
- Divide the batter evenly between the muffin cases.
- Bake for 18–22 minutes, until risen, golden and a skewer inserted into the centre comes out clean.
- Leave to cool in the tin for 5 minutes, then transfer to a wire rack to cool slightly before serving.
