Why this works
A filling, moderate-calorie dish with good fibre, but it is fairly starchy and can be high in sodium depending on the salt added.
Fibre from beans and potatoes. Baked beans contribute soluble fibre, while the potato skin adds some extra fibre, supporting digestive health and fullness.
Vitamin C and potassium. Potatoes provide potassium and some vitamin C, though vitamin C is reduced by baking and longer cooking.
Sodium caution. Baked beans and added salt can push sodium up, which is worth watching if you are limiting salt for blood pressure.
Method
- Dice the potatoes and boil them for 5 minutes until just starting to soften, then drain well.
- Fry the potatoes in a large non-stick pan until golden and crisp around the edges.
- Add the baked beans, chopped chillies and pepper, then cook until everything is piping hot and the sauce has thickened slightly.
- Serve straight from the pan.
