Why this works
A hearty, protein-rich skillet that is energy-dense and quite high in saturated fat and sodium, mainly due to the chorizo and added salt.
Protein-rich. The mince and chorizo provide a substantial amount of protein, supporting satiety and muscle maintenance.
Carotenoids and fibre. Carrots and onions add fibre plus carotenoids such as beta-carotene, which supports eye health and overall vegetable intake.
High sodium and saturated fat. Chorizo plus the added salt make this dish relatively high in sodium, while chorizo and mince contribute a significant saturated fat load.
Method
- Heat a little plain cooking oil in a large frying pan over medium heat.
- Add the onions and carrots and cook for 6-8 minutes until beginning to soften.
- Stir in the chorizo and cook for 2-3 minutes to release its oil.
- Add the mince, breaking it up with a spoon, and cook until browned all over.
- Season with salt and black pepper, add a splash of water if needed, and simmer for 10 minutes until the carrots are tender and the mixture is thick and savoury.
- Serve hot as it is, or with your preferred side if available.
