Why this works

Protein-rich and very low in carbohydrate, but relatively high in saturated fat and sodium due to the smoked salmon and cheese.

High-quality protein. Eggs, smoked salmon and cheese provide a substantial amount of complete protein, supporting muscle maintenance and satiety.

Sodium is notable. Smoked salmon and cheese contribute a fairly high sodium level, which may be a concern for anyone monitoring blood pressure or salt intake.

Contains vitamin D and B12. Eggs and salmon are useful sources of vitamin B12, with some vitamin D from eggs and oily fish.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and lightly butter a small baking dish.
  2. Whisk the eggs with the milk in a bowl until smooth.
  3. Stir in most of the cheese and fold through the smoked salmon, tearing it into bite-size pieces.
  4. Pour the mixture into the dish and scatter the remaining cheese over the top.
  5. Bake for 18-22 minutes until just set and lightly golden.
  6. Rest for a few minutes before serving warm.
