Why this works

A hearty, protein-containing traybake that is relatively high in fat and salt, with some fibre and vegetable content from the mixed veg and root vegetables.

Protein from sausages and yoghurt. Provides a moderate amount of protein per serving, supporting satiety and muscle maintenance.

Vegetable micronutrients. Carrots, red onion, celery and mixed vegetables contribute vitamin A, vitamin C, potassium and some folate.

Salt and saturated fat concern. Cooked sausages, added salt and creamy yoghurt can push sodium and saturated fat higher than ideal for everyday meals.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Cut the carrots, celery and red onion into bite-sized pieces and tip into a roasting tin with the bagged vegetables.
  3. Add the cooked sausages and dot over the margarine, then season with salt and black pepper.
  4. Roast for 25-30 minutes, turning once, until the vegetables are tender and starting to colour.
  5. Mix the creamy Greek yoghurt with a splash of milk and season to make a dressing.
  6. Serve the traybake hot with the yoghurt dressing spooned over or alongside.
