Why this works

A rich, energy-dense dessert with moderate carbohydrate and low fibre, best enjoyed as an occasional treat rather than an everyday staple.

Vitamin A from pumpkin. Pumpkin puree provides beta-carotene, which supports normal vision and immune function.

Saturated fat from butter and cream. The pastry and filling contribute a high saturated fat content, so portion size matters for heart health.

Protein from eggs and cream. Eggs add a modest amount of protein, but this remains a relatively low-protein dessert overall.

Method

  1. Make the pastry by rubbing the butter into the flour and caster sugar until it resembles breadcrumbs, then mix in a little cold water to bring it together.
  2. Wrap the pastry and chill for 20 minutes.
  3. Roll out the pastry and line a 23 cm pie dish, then chill again while you heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  4. Blind bake the pastry case for 15 minutes, then remove the baking beans and bake for 5 minutes more until lightly golden.
  5. Whisk together the pumpkin puree, eggs, double cream, caster sugar, cinnamon, ginger, nutmeg, vanilla extract and salt until smooth.
  6. Pour the filling into the pastry case and bake for 35 to 40 minutes until just set with a slight wobble in the centre.
  7. Leave to cool fully before slicing and serving.
