Why this works

A light, protein-containing dessert that is relatively low in fat and calories, but moderately high in natural sugars from the orange juice.

Vitamin C. Orange juice provides a useful amount of vitamin C, which supports immune function and helps with iron absorption.

Protein and B12. Eggs and milk contribute protein, vitamin B12 and other nutrients important for muscle maintenance and energy metabolism.

Saturated fat is modest. With only a small amount of butter and low-fat milk, the saturated fat content stays fairly moderate for a custard dessert.

Method

  1. Preheat the oven to 160°C (Fan 140°C, 320°F, Gas Mark 3).
  2. Warm the low fat milk and orange juice gently in a saucepan until steaming, but do not boil.
  3. Whisk the eggs in a bowl until smooth.
  4. Slowly pour the warm liquid into the eggs, whisking constantly.
  5. Pour the mixture into lightly buttered ramekins and place in a baking dish.
  6. Add hot water around the ramekins to make a bain-marie, then bake for 18-20 minutes until just set.
