Why this works
A protein-rich, fairly low-carbohydrate dish, but the added salt pushes the sodium content up.
High-quality protein. Minced meat provides a substantial amount of protein per serving, supporting muscle maintenance and satiety.
B vitamins and iron. Mince is a useful source of iron, zinc and B vitamins, especially vitamin B12, which support energy metabolism and red blood cell formation.
Vegetable micronutrients. Mushrooms, tomatoes and spring onions contribute vitamin C, potassium and a range of antioxidants, though the overall vegetable portion is modest.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
- Remove the stalks from the mushrooms and arrange the caps on a baking tray.
- Cook the mince in a pan until browned, then add the chopped tomatoes and spring onions.
- Spoon the mixture into the mushroom caps.
- Bake for 15–18 minutes until the mushrooms are tender and the filling is hot.
