Why this works
Very low in calories and fat, with natural fruit sugars and modest vitamin C from strawberries and lemon.
Vitamin C. Strawberries and lemon both contribute vitamin C, supporting normal immune function and collagen formation.
Low energy density. This compote is light and fruit-based, making it suitable for lower-calorie desserts or toppings.
Naturally occurring sugars. The sweetness comes entirely from fruit, with no added sugar in the ingredient list.
Method
- Hull the strawberries and cut any large ones in half.
- Put the strawberries and lemon juice into a small saucepan.
- Cook over a low heat for 8–10 minutes, stirring occasionally, until the fruit softens and releases its juices.
- Mash lightly with a spoon for a chunky texture, then cool slightly before serving.
