Why this works

A rich, energy-dense toastie with a good protein hit, but also high in saturated fat and salt due to the cheese, butter and added salt.

Calcium from cheese. The cheese provides a useful amount of calcium for bone health, though portion size is fairly generous.

Vitamin C and antioxidants. Lemon and parsley add a little vitamin C plus plant compounds, but the amounts are modest in a toastie.

Salt and saturated fat. This recipe is relatively high in saturated fat and sodium, mainly from cheese, butter and the added pinch of salt.

Method

  1. Finely grate the cheese and mix it with the chopped parsley and finely grated lemon zest.
  2. Spread the filling evenly over 2 slices of bread, then sandwich together.
  3. Heat a frying pan over a medium heat and lightly butter the outside of the sandwich.
  4. Cook for 2-3 minutes on each side until deeply golden and the cheese has melted through.
  5. Slice in half and serve immediately, with a little lemon wedge if desired.
